Carrot porial - Carrot stir fry

Carrot is a nutritious root vegetable. As we know well, it is a good source of vitamins, nutrients, minerals, and fiber.  It is good for our eyes and skin as it is rich in Vitamin A.

The best way to get the nutiritional values of carrot is to take it in the raw form, as a juice or as a salad.  

The nutritional benefits are lost if it is cooked for a longer time. So, here we go with a carrot stir fry, which we prepare very swiftly.

Ingredients :
Fresh carrot -  3 or 4 nos
Big Onion - 2 nos (medium sized)
Red chili - 3 nos
Mustard seeds
Curry leaves
Coriander leaves (optional)
Salt
Coconut oil 

Preparation :

Grate carrot using a vegetable grater.
Cut onion into small pcs.

In a kadai, add 1 teaspoon of coconut oil, splutter mustard seeds.
Add red chilies, then add onion.
Add salt and see to that the onion is cooked slightly.
Now add carrot and curry leaves. Reduce the flame completely.
Stir well and cover it with a lid. Just cook it for half a minute.
Switch off the stove and it cooks in that heat itself. 
Now transfer it to a vessel. Finally, add coriander leaves. 
Very tasty carrot fry is ready.

Here no need to add water to cook carrot. 
This carrot fry goes well with sambar sadham, and rasam sadham .
