Cabbage thoran - Cabbage stir fry - Cabbage poriyal


Cabbage is a low calorie, fiber-rich, leafy vegetable.

It is a storehouse of many essential vitamins and minerals.

Here we are going to see Cabbage thoran. Thorans have a place in the everyday lunch menu of Kerala.

Cabbage thoran is a common and frequently made one.

It is a healthy and delicious recipe and also easy to make.

Ingredients:

Cabbage - 1/2 of a medium sized one
Coconut - sliced pcs preferable or 1/2 a cup grated (a small cup)
Red chilis - 2 nos
Cumin seeds or Jeerakam - 1/4 tsp or less
Turmeric powder
Salt
Coconut oil
Urad dal
Mustard seeds
Asafoetida
Curry leaves

Preparation:

Clean the leaves and chop them finely.


In a mixie, you can pulse the ingredients, coconut, red chiles and cumin seeds. This is to give a special taste and flavor.


In a kadai, add the chopped cabbage, salt, turmeric powder and sprinkle water. Do not add more water. If so, it will turn soggy.

Stir well, cover the pan with a lid and cook in a slow flame. 

Once it is cooked, transfer this to a vessel.


Now in the kadai, add coconut oil, urad dal, splutter mustard seeds and a pinch of asafoetida. Then add curry leaves and coconut mixture.

Now add cabbage and stir well.

Yummy cabbage thoran is ready.
