We know they are rich in carbohydrates. So, those who are in a diet plan, exclude potatoes.
Potatoes can easily be a part of a healthy diet, based on how we prepare it.
By the way of steaming or boiling the potatoes for a fry, we can reduce the amount of oil added to prepare the recipe. Here is one such simple recipe of potato fry.
Ingredients :
2 big potatoes
Cut into small pcs with skin
Turmeric powder 1/2 tsp
Rice flour - 1½ tsps
Red chili powder - 1½ tsps
(as required)
Asafoetida - a generous pinch
Coconut oil or Gingely oil - 2 tsps
Preparation :
Wash the potatoes in water. Cut into small cubes with the skin. So, wash the potatoes thoroughly without any dirt.
Steam the potatoes in a steamer or in an idli baking vessel. Let it cool.
Now add salt, rice flour, and red chili powder. Mix thoroughly. Keep it aside for 5 to 7 minutes.
In a shallow frying pan add only 2 tsps of oil, then turmeric powder, asafoetida and then add the potatoes.
Stir well and spread them evenly in the pan. Cook on a slow flame. Stir now and then.
You can notice the change in color once the potatoes are fried.
This recipe takes a little more time than a deep fry recipe, as we frying on a slow flame with a little oil.
Crispy and very tasty potato fry is ready. This is a good accompaniment for sambar and rasam with rice.
- This recipe is moderately hot as we have used a small quantity of red chili powder.
- We add rice flour to get crispness. While adding rice flour it would become sticky, but do not worry about that. Rice flour gets roasted when it is added to the oil.
- As we are not removing the skin, the color is of darker brown.
