
Pumpkins are a member of the gourd family, which includes Cucumber, Honeydew melon, Watermelon and Zucchini.
All the parts of a Pumpkin are edible. Here we are going to see a thogayal, which is made from the strands and seeds (inner soft part) of a Pumpkin. Pumpkin seeds are used to make halwa.
Ingredients :
Pumpkin's strands and seeds (taken from a sizeable portion)
Coconut - 3 tsps or a few cut pieces of Coconut
Bengal gram (Kadalai paruppu) - 2 tsps
Asafoetida - a generous pinch
Tamarind - Size of an Amla
Red Chilies - 3 nos
Salt to taste
Curry leaves
Gingelly oil
Preparation :
In a kadai, add oil and roast Bengal gram, Urad dal and red chilies.
Add Asafoetida to this.
Transfer this to a cup.
Now add a little oil and cook the inner part of the Pumpkin (strands and seeds). Add salt.
Let it cook for a few minutes.
Allow it to cool.
In a mixie, add the roasted ingredients, Tamarind and grind. Then add Coconut, Cooked Pumpkin, and Curry leaves. Add a little water and grind coarsely.
Very tasty thogayal is ready.
This is one of the best combinations for rice, with pappad or vadaam.
